1. Mexican Chicken<\/h3>\n

Mexican chicken isn\u2019t necessarily really from Mexico, but it is a fun recipe that makes great finger food, that is easy to make and that is spicy and healthy.<\/p>\n

First, you will be making breaded chicken<\/a> pieces. To do this, you will need a plate of breadcrumbs and you\u2019ll need a bowl of egg \u2013 simply crack one whole egg into the bowl.<\/p>\n

Now you\u2019re going to dip each piece of chicken into the raw egg and then roll it in the breadcrumbs so that they stick to it and cover it. Try not to think about the fact that chickens lay eggs and that this is essentially rolling them in their unborn children\u2026<\/p>\n

Once you\u2019ve done this, squeeze the juice from a whole lemon onto the chicken pieces and then place them in a preheated oven at 200C. You\u2019ll be leaving them in here for 30 minutes.<\/p>\n

While that takes care of itself, meanwhile you will want to prepare the fruit chutney. You can play around with this recipe, but the basic ingredients are red pepper (thinly sliced), raisins, apple pieces, red onion, a little olive oil, and half a can of chopped tomatoes. Fry this up and add a little chili powder and then on top of that, you can add a small spoon of honey to sweeten it.<\/p>\n

Once that\u2019s all done, serve both the chicken and the chutney on a plate with a small (optional) dollop of mayonnaise.<\/p>\n

\"\"2. Chorizo Chicken Tray Bake<\/h3>\n

This is a recipe that is perfect for serving up to guests and that is incredibly tasty and wholesome.<\/p>\n

To make chorizo<\/a> chicken traybake, you will need whole chicken thighs on the bone. You then take these and cover them in a light layer of oil. Chop some onions and place all of this on a tray together with chopped chorizo pieces (one whole chorizo for 4 people). Add in some sprigs of rosemary to bring out extra flavor and season.<\/p>\n

Additionally, you should add some potato chips to the mixture. Cut potatoes into wedges and cover in oil, leaving the skin on and add to the tray.<\/p>\n

Now add this concoction to a tray and place in the oven on 200C for 30 minutes. Turn it up toward the end in order to create crispiness around the edges and serve with a few servings of vegetables.<\/p>\n

\"\"3. Chicken Caesar Salad<\/h3>\n

Chicken Caesar salad is a classic chicken recipe that is ideal for serving up in the summer and for anyone on a diet: it\u2019s made up of lean protein (the chicken) along with a fresh salad.<\/p>\n

Start by serving some salad leaves, chopped baby tomatoes, and red peppers in a bowl. Add some chicken strips on top.<\/p>\n

This is really the entirety of the ingredients, save for the Caesar dressing. If you\u2019re in a hurry, then you can buy this ready-made and have a healthy meal ready in minutes. Otherwise, you can make your own Caesar dressing with the following ingredients:<\/p>\n

– Dijon mustard
\n– Vinegar
\n– Mayonnaise
\n– Lemon
\n– Olive oil<\/p>\n

Mix these together to taste and add a little salt, then sprinkle lightly onto the salad.<\/p>\n

You can also at this point add a little cheese (flakes of cheddar or of parmesan<\/a> work very nicely, as do dollops of goats cheese), or alternatively croutons.<\/p>\n

Of course, any type of additional salad that you wish to add to the mix will also work well. That can include things like cucumber, olives, avocado, etc.<\/p>\n

Finally, serve in a bowl with a side of bread with a little olive oil.<\/p>\n

\"\"4. Chicken Pesto Pasta<\/h3>\n

This is a very quick meal to make that is tasty and filling on those long winter evenings when you just want something comforting!<\/p>\n

To make it, you will first need to fry up some pieces of boneless chicken in a pan with a little olive oil<\/a>. While the chicken is browning, boil a kettle and then use this to cook up some pasta in a separate pan. Towards the end, you will add some spring onions, cut into short tubes.<\/p>\n

When the pasta is cooked, drain off the water and then tip the browned chicken into the pan with the spring onions.<\/p>\n

Keep this pan on low heat with some oil and then add cr\u00e8me fresh and red pesto to taste. You will likely use about one part cr\u00e8me fresh to two parts red pesto \u2013 but it is up to you how you like the taste!<\/p>\n

Finally, season with a little salt and pepper and then serve!<\/p>\n

\"\"5. Chorizo & Tomato Chicken<\/h3>\n

This meal once again pairs chorizo with chicken but in a slightly different way. This time, you are going to be cooking the meal on a slow cooker (or on a very low setting on the hob) and at the same time, you\u2019ll be using a lot of tomatoes. This dish is served with rice.<\/p>\n

To begin, take a single large pot. Add in some boneless chicken pieces and chopped tomatoes from a can (with the juice). For every person\u2019s worth of chicken, add half a can of chopped tomatoes. At the same time, add in half a tube of tomato puree and some sun-dried tomatoes<\/a> (again with the juice on). Add a small bit of water and some chopped red onion.<\/p>\n

Now dice in some chorizo and add in some rice. Mix it all up, cover and cook on a low heat for a long time. This meal isn\u2019t finished until the rice is cooked and the chicken is cooked through. In this case, you are using the tomato mixture as the substrate that is going to heat and cook the chicken. It takes a long time, but the result is a delicious infusion of flavors from the tomato and from the chorizo!<\/p>\n

\"\"6. Chicken and Mayo Salad<\/h3>\n

On those days when you can barely be bothered to cook, chicken can be your ally. It is always quick to fix up and it provides a healthy and comforting dose of protein. Throw in some pasta and you have the perfect comfort food that is easy to prepare.<\/p>\n

This is even easier to make than the other chicken and pasta dish. This time, you are going to fry up your chicken pieces. If you\u2019re feeling very lazy, then you can even try boiling the chicken in order to make it less hands-on, or you can grill them in the oven.<\/p>\n

Meanwhile, boil some pasta<\/a> with some chopped onion in the pan. This is another easy way to save time!<\/p>\n

When the pasta has finished boiling and the onion is cooked, you\u2019re then going to drain it off and return it to the pan on low heat. Add the chicken.<\/p>\n

Now, keep the pan cooking and add in some mayonnaise to taste and some sweetcorn. Serve when hot.
\nThis is a very easy combination that is surprisingly tasty thanks to the mayo. You need very few ingredients and it\u2019s a perfect easy fall-back for a tired or busy evening.<\/p>\n

\"\"7. Chicken Hot Pot<\/h3>\n

Chicken hot pot is a simple stew that you will make using chicken. It has the benefit of once again being made in a single pot meaning that you can simply drop in the ingredients and not worry about them.<\/p>\n

Start by filling the pot with a little water and bringing it to a boil. Then add pieces of boneless chicken, chopped onion, and small pieces of potato. Stir and add ingredients to taste. Things that work very well in here will include green peppers, sweetcorn, chicken stock, and thickening granules \u2013 the job of the last two ingredients is to thicken up the stew and make it less watery \u2013 which can make a big difference when it comes to the taste. Add in a little cream too and you can make the whole thing significantly more enjoyable.<\/p>\n

Stir all this while heating and cook until the potatoes<\/a> are soft enough to eat and the chicken is cooked all the way through. You\u2019ll find that this is an easy recipe that can be very warming \u2013 although it perhaps isn\u2019t the most interesting!<\/p>\n

\"\"8. Chicken Avo Baguette<\/h3>\n

For this recipe, you will need to buy half a chicken. If you want it to be as tasty as possible, then you can buy a ready-cooked and seasoned chicken with the skin on. If you\u2019re more interested in health, then buy skinless chicken and cook it yourself with minimal oil.<\/p>\n

Either way, while hot you are going to tear off pieces of chicken and add to a baguette that has been spread with mayonnaise<\/a>. You\u2019re also going to add in some salad leaves, along with scoops of avocado. Finally, add in some salt and pepper and some flakes of cheddar for a truly tasty meal.<\/p>\n

You can serve this with a side of salad if you want to make it a little healthier and a little more varied.<\/p>\n

\"\"9. Chicken Sandwich<\/h3>\n

You can make a very similar chicken sandwich to go with your chicken avocado baguette. Once again, take half a chicken that has been pre-cooked and then slice off pieces (with the skin on for extra taste) and add to your two slices of bread. Spread on some mayonnaise and add some avocado or alternatively some guacamole.<\/p>\n

Sprinkle on some salt and pepper, add in some salad leaves (or just add these on the side) and then optionally include some flakes of cheddar<\/a> or parmesan. There are plenty more ingredients you can optionally add to this sandwich if you like (isn\u2019t that just the best thing about sandwiches?) including cucumber, sweetcorn, olives, etc.<\/p>\n

A slightly healthier alternative to this meal is to use chicken that has been grilled as this can be cooked without adding large amounts of oil on top.<\/p>\n

\"\"10. Chicken Carbonara<\/h3>\n

Carbonara<\/a> is one of the all-time classic Italian recipes. It is delicious to eat out and it is easy to prepare. What many people don\u2019t realize is that chicken can often be added to carbonara and pairs very nicely with the overall taste. You can also place the whole concoction in the oven if you want to make it crispy \u2013 especially once you\u2019ve added some cheese on top.<\/p>\n

To make the carbonara, we are going to be using a slightly more traditional recipe. That means we won\u2019t be adding great swathes of cream or other \u2018extras\u2019 like that.<\/p>\n

To start then, chop up some red onion into small pieces and some bacon (you can also use ready-cut lardons). If you want to be really authentic about it, then you will need to use some pieces of meat taken from the pig\u2019s cheek! But that is just for bonus points. Now add this to a frying pan with a good helping of olive oil and set it cooking on high heat. High heat is important because we want it to crisp up and even caramelize slightly as the red onion gets really hot. Of course, during this time you will also be frying up the chicken and trying to brown it around the outside.<\/p>\n

While this is cooking, you also need to prepare your pasta. To keep things traditional, we\u2019re going to be using spaghetti. A little trick for making this easier to cook though is to snap it in half before you add it to the pan.<\/p>\n

This also makes it easier to eat after it is ready! Add a pinch of salt.<\/p>\n

When the pasta is ready and the chicken is cooked through, you will then add everything together to a bowl and stir with a little salt and a good helping of pepper. Now grate in a generous portion of cheddar cheese and stir until it is melted through the mixture.<\/p>\n

Take the pan off the hob completely now but don\u2019t give it time to cool down. You\u2019re now going to crack one whole egg in and mix it through. This should cover the pasta and the heat of the pasta will be enough to cook it! You don\u2019t want it to scramble through. And likewise, you don\u2019t need more than one large egg \u2013 even though you may feel otherwise!<\/p>\n

Serve up with a side of vegetables, such as broccoli.<\/p>\n

\"\"11. Chicken Soup<\/h3>\n

To make chicken soup<\/a>, you will make the chicken hotpot we made earlier, but you will use small pieces and more liquid.<\/p>\n

So, fill a pan with just a little hot water and then add your boneless pieces of chicken and some chopped onion and garlic. Add in some potato, some salt and pepper to taste, some green peppers, some sweetcorn, and anything else that you think might make for a tasty addition.<\/p>\n

Boil this for a while and make sure everything is small and soup-like! When the potatoes are soft and the chicken is cooked through, you can add a little cream to the mixture in order to thicken it and add some tasty richness. You can also add some white wine for extra flavor, chicken gravy granules, and thickening granules\/flower if necessary.<\/p>\n

An optional additional step is to blend this together to make it smooth \u2013 but this is best left to your own discretion.<\/p>\n

\"\"12. Steamed Chicken and Rice<\/h3>\n

Chicken is incredibly versatile. It can be unhealthy and indulgent (chicken burger) but it can also be the pinnacle of health. In fact, chicken is the go-to ingredient for bodybuilders around the world, as well as countless celebrities looking to get ripped for their next movie!<\/p>\n

To eat chicken in its healthiest form without completely drying it out, steaming is the way to go. You can do this in a steamer, or you can do it by using a sieve and a pan of hot water. Add hot water to the pan and bring to the boil, then place your chicken pieces (boneless) into the sieve. The idea is that the steam will rise up through the sieve and thereby cook the chicken for you. Of course, this needs to be a metal sieve so it won\u2019t melt! Be careful with your hands.<\/p>\n

Add a little salt and meanwhile cook some rice using the usual recipe and again a pinch of salt. You should also boil up some vegetables meanwhile \u2013 such as broccoli<\/a> or beans.<\/p>\n

Serve with the chicken on top of the rice and sprinkle some paprika or a spice of your choice along the top to improve the flavor. It ain\u2019t fun, but it\u2019s very lean and great for adding muscle!<\/p>\n

\"\"13. Chicken Burgers<\/h3>\n

At the other end of the health, the spectrum is the chicken burger<\/a>. That said, many people enjoy chicken burgers because they feel that bit healthier than eating beef burgers \u2013 thanks to the lean nature of chicken!<\/p>\n

To make, you are going to take your chicken and then grill it. Grilling your chicken will result in meat that is rich and tasty without being dried out. Because you aren\u2019t adding any oil, it will be leaner than fried or baked chicken.<\/p>\n

You\u2019re going to serve this chicken inside a burger bun and you can add a bunch of extra ingredients here in order to improve the flavor. Good choices include mayonnaise on the bun, jalapenos, gherkins, lettuce, cucumber, cheese (baked camembert is particularly delicious), fried eggs, bacon, or avocado. You can use all these things for a, particularly delicious combination.<\/p>\n

\"\"14. Boursin Chicken<\/h3>\n

Boursin chicken is named after the creamy, garlic cheese that can be spread onto bread. That said, any type of cream cheese<\/a> can be used in this way.<\/p>\n

To make this recipe, you will need chicken breasts without bones. You\u2019re then going to cut pockets into them and fill these with the cream cheese. Be careful not to use the same knife and unintentionally get raw chicken in your cheese! Oh and don\u2019t be stingy \u2013 it\u2019s very rare to use too much, but many people use too little!<\/p>\n

Now you\u2019re going to take strips of streaky bacon and wrap these around the chicken: use two pieces for each breast.<\/p>\n

Place these completed portions onto a baking tray, cover lightly in oil and then cook at 200C. Make sure to lay down some foil on the tray first.<\/p>\n

Meanwhile, you\u2019re also going to cook up some vegetables to go on the side and some potato wedges. To make the wedges, simply chop into the shape you want them (it\u2019s okay to leave the foil on) brush in oil and place in the oven at the same time. All this will take around 30 minutes to cook and you can use that time to boil some vegetables such as carrots and broccoli.<\/p>\n

\"\"15. Roast Chicken<\/h3>\n

Being able to make a roast chicken is a basic recipe that everyone should learn.<\/p>\n

Fortunately, this is also a fairly simple recipe with the main challenge being to time all of the different ingredients together.<\/p>\n

The trick is to brush the chicken lightly with oil (you\u2019re using half or a whole chicken), add salt and pepper, and then wrap it in foil. This will seal in the juices and allow you to cook at a higher temperature without risking burning. Cook on 220C for 40 minutes, or follow the guidelines on the packaging.<\/p>\n

While this cooks, you will also prepare the vegetables. The key to a great roast dinner is to know how to make great baked potatoes! And the secret to this is to boil the potatoes lightly first, in order to make them light and fluffy. Boil on the hob for 5 minutes and then brush them in oil, toss them around and add them to the oven, This will cause them to crisp up. You can also use goose fat.<\/p>\n

The other vegetables can be cooked on the hob and timed to coincide with the chicken. For extra credit, cook parsnips<\/a> in the oven at the same time as the potato and add the carrots at the end with a little salt to caramelize. Once everything is finished, add the juices from the chicken foil to a pan with a little boiling water and some chicken stock to make the gravy. Thicken with flour or thickening granules.<\/p>\n

\"\"16. Garlic Chicken<\/h3>\n

Garlic chicken is another traybake and one that is ideal for serving to guests\u2026 it\u2019s super garlicky though, so just make sure you don\u2019t have a date or interview the next day!<\/p>\n

To prepare this meal, you will be using bones pieces of chicken, which you are going to add to a tray, brushed with olive oil. Also in this pan, you will be adding chopped white onion and whole garlic cloves. These cloves should be served with their purple skin on and you should give each person eating two or three with their chicken. Add potato chip \u2013 thin potato slices with the skin on \u2013 and thinly sliced carrot. Season with salt and pepper. Cover the whole thing in foil and cook in the oven at 200C for 20 minutes. After those 20 minutes, remove the foil and cook for another 10 minutes or until the chicken and potatoes look crispy.<\/p>\n

During all this, you should also have been boiling some broccoli or beans <\/a>and you will serve the whole thing together. It\u2019s incredibly garlicky\u2026 and that makes it delicious!<\/p>\n

\"\"17. Chicken Stir Fry<\/h3>\n

Chicken stir fry is an easy and tasty meal that you can prepare in a single pan \u2013 or a wok in this case. It\u2019s also a very healthy option, and you can add more nutritional value by adding additional vegetables as you wish.<\/p>\n

Add just a tiny bit of oil and a splash of water to a pan with some thin chicken strips. Cook until the strips are nicely browned and then add in the vegetables<\/a>. You\u2019ll start with thin slices of pak choi, and then follow this up with the heads of some broccoli. Thinly sliced green pepper is also a good option.<\/p>\n

Towards the end, add some spring onions and sugar snap peas.<\/p>\n

Once everything is soft and nicely edible, you are then going to add in some hoisin sauce and a pinch of salt. Add more water if necessary. Stir everything vigorously and serve.<\/p>\n

\"\"18. Chicken Fajitas<\/h3>\n

Chicken fajitas are fun finger food that is ideal for parties and for enjoying in front of the TV on a Saturday night with the family.<\/p>\n

All you will need is some fajita wraps, chicken, and the salad pieces you want to serve in it. You can get a sachet of fajita seasoning, or you can use paprika<\/a> or chili powder. Add some mayonnaise to the fajita wraps themselves and then fold them to keep everything contained.<\/p>\n

Good salad options to add to the mix include: salad leaves (lettuce, rocket, baby spinach, etc.), thinly sliced green peppers, onions, chopped tomatoes and anything else that you think will go well inside a wrap!<\/p>\n

The key to folding the wrap correctly is to fold the bottom up first to hold the chicken from underneath, then to fold each side down.<\/p>\n

When making the wraps, they will likely be ready one at a time. This is one of the only downsides as it means you need to get up each time the next person needs theirs served!<\/p>\n

\"\"19. Chicken and Broccoli Pasta<\/h3>\n

Chicken and broccoli pasta is a delicious and rich way to enjoy chicken with pasta. Take strips or chunks of boneless chicken and then add to a frying pan with some chopped white onion, some pieces of bacon (or lardons), and some chopped mushrooms<\/a>. You\u2019re then going to add in a small amount of white wine and let it reduce slightly. Add in some chopped garlic also.<\/p>\n

Meanwhile, you should also be boiling some broccoli and some pasta, each with a pinch of salt. Chop the heads off the broccoli and keep it nice and small, then drain the pasta and mix it all together on medium heat. Pour on some olive oil and add plenty of pepper. Now add some single cream in order to coat the chicken and the mixture.<\/p>\n

Heat everything up with more seasoning and serve.<\/p>\n

\"\"20. Chicken Tomato Pasta<\/h3>\n

Chicken tomato pasta is another great dish you can make with chicken and pasta and is once again comforting and indulgent while being relatively simple to fix up.<\/p>\n

First, you are going to take a frying pan and you are going to brown some chicken in some oil. At the same time, you will once again be frying the red onion in here, along with some pieces of garlic and some chopped bacon<\/a>. Mushrooms can be added optionally.<\/p>\n

Once again, the aim here is to cook on fairly high heat \u2013 to caramelize the onion in a similar way to the carbonara. In fact, this recipe is very similar to the carbonara except that tomato will be adding the flavor. You should once again be boiling some pasta at the same time, with a pinch of salt.<\/p>\n

Toward the end, add some red pepper to the pan with the bacon and give it time to soften. One whole red pepper for every two people is a good rule of thumb.<\/p>\n

Once this is all finished, add to a pan and toss with the pasta and a little more oil. You\u2019re now going to pour on a whole can of chopped tomatoes and half a tube of tomato puree to taste. Let this cook for a little longer and it should taste rich and crispy.<\/p>\n

Once that\u2019s finished, serve into bowls and grate cheddar cheese on top. You\u2019ll be left with something that is very comforting and tasty but that has a good amount of vegetables in as well to make it at least a little healthy!<\/p>\n\r\n
